Grilled Citrus Prawns Recipe with Just Enough Sauvignon Blanc

Looking for the perfect end-of-summer pairing? These zesty grilled shrimp skewers are easy to make and pair beautifully with the crisp, refreshing notes of our Just Enough Sauvignon Blanc.

Ingredients:

Prawn Marinade:
1 small orange, juiced
1 lime, juiced
⅓ cup olive oil
2 cloves garlic, microplaned
1 tsp agave
2 tsp tajin
Salt & pepper, to taste
~1 ½ lb prawns, peeled & deveined

Mango Avocado Salsa:
3 large mangos, diced
2 avocados, diced
1 red bell pepper, diced
1 shallot, diced
2 jalapeños, diced
½ bunch cilantro, finely chopped
2 - 3 limes, juiced
Salt & pepper, to taste

Method:
1. Prep Skewers: If using wooden skewers, soak them in water for a few hours to prevent burning.
2. Make Salsa: Combine all salsa ingredients in a bowl, gently mix, and chill in the fridge.
3. Marinate Prawns: Mix marinade ingredients in a bowl. Add prawns, and marinate for 30-60 minutes.
4. Grill Prawns: Preheat grill to high. Grill prawns for 3 minutes on each side.
5. Serve: Top with mango avocado salsa and enjoy!
