Summer 2022 is coming to a close, and it was one for the books. From beach days and music festivals to picnics in the park and family BBQs; this summer got us back onto our feet and spending time with the people we love. While we soak in the last few weeks of that summer sun, we encourage you to bring your crew back together to enjoy delicious food and wine (AND reminisce on the amazing memories you’ve made over the last 3 months).
So in the spirit of summertime, we’ve decided to create a recipe series with all of our favorite one-bite appetizers to pair with each of our delicious wines.
The first pairing in our one-bite appetizer series is Just Enough Chardonnay paired with Shrimp & Avocado Cucumber Bites. This recipe features juicy, refreshing cucumber slices alongside a kick of creole spice and creamy avocado. It is shrimply irresistible. (See what we did there?)

Shrimp & Avocado Cucumber Bites

Shrimp and Cucumber Bites:
- 1 tablespoon oil (of choice)
- 1 lb. of shrimp (prepped: peeled and deveined)
- 1 english cucumber sliced
- 1 tablespoon of creole seasoning
Avocado Mash (*PS: you can also use your favorite grocery store guac - we recommend H-E-B Mild Guacamole):
- 1 mashed avocado
- 1 tablespoon of chopped cilantro
- 1 tablespoon of lemon juice
- Salt to taste
Shrimp: Coat the Shrimp with oil of choice and creole seasoning and cook in a heavy bottom pan or skillet on medium-high heat until slightly blackened (about 3 minutes per side)
Avocado Mash: Mix all of the listed ingredients together (easy-peasy).
TO ASSEMBLE: Place your cucumber slices on a plate, top with avocado sauce and a single blackened shrimp. Garnish with chopped cilantro (optional).
Finally, crack open a chilled can of Just Enough Chardonnay. Enjoy in the can, or in your favorite wine glass and enjoy this delicious flavor combination.
